We’re excited to announce our latest collaboration with @publicrecordsnyc
Together, we took leftover celeriac waste from their kitchen and up-cycled it into a new spirit—transforming what would have been compost into something truly beautiful.
Through infusion and re-distillation under vacuum, the celeriac revealed a profile that’s bright and vegetal with an earthy backbone, carrying notes of fresh celery leaf, white pepper, and a subtle nuttiness. There’s a gentle rooty sweetness and a clean, almost mineral finish that makes it as versatile as it is distinctive.
