Bright, saline, and unmistakably olive. This spirit captures the essence of olives with a hit of briny minerality and a soft, savory roundness. Vacuum distillation allowed us to isolate the most delicate aromatic compounds—like aldehydes and esters responsible for olive’s buttery, floral, and nutty notes—while preserving the sharp salinity and lactic tang from the brine. The result is a spirit that’s clean, complex, and incredibly versatile behind the bar.

This batch was made entirely from leftover olives and brine sourced from our friends at @farm.one and @pdfbk . Olives are a staple garnish, but the jars behind the bar are rarely finished—leaving behind liters of brine and soft, unsold olives. In the U.S. alone, restaurants throw away roughly 11.4 million tons of food per year, with garnishes, condiments, and opened jars often among the first to go. By intercepting this overlooked waste stream, we’re continuing our mission to reimagine what spirits can be made from.
